 ENVIRONMENTAL AWARENESS:  
Cacao farms are unfortunately known for slavery and child's work. Most of these farms cacao harvest is sold as commodity for the big players.

We are NOT part of this sad reality.

We source and directly buy superior cacao, which was carefully planted and harvested, then fermented and sun dried.
This process is handled by the farmer, in his property, raising the price of his product.

We personally visit these farms to verify the cacao quality and also the work conditions, to ensure no slavery nor child exploration is taking place.

We pay to the farmer a better price than the exchange price (commodity). So that, the families are estimulated to improve their products and can have a better life in the countryside.

In our manufactory plant, the hot water comes from a solar heating system. Our productive process are designed in order to reduce the waste of ingredients and energy.

Where does cacao come from?

From Brazilian Amazon and Minas Gerais.

We source and buy the cacao directly from the farmers or familiar cooperatives in Brazilian Amazon.

We visit the properties, meet the farmers and their families, share ideas and expertise, helping each other to improve our work.

In 2019, after 4 years searching, we found fine flavor cacao in our state, Minas Gerais. We are very proud of this discovery!

Minas Gerais represents only 0,08% of Brazilian's cocoa production, so this cacao is a rare and pleasant surprise!!!

Why is it named JAVA?

This is a funny history!

Before establish Java Chocolates, we used to work as Java Developers. Yes, the computer Java thing.

Our first product was a coffee flavored candy, which gave us the insight for naming the business, since Java is a nickname for coffee in many countries.

During our cacao and chocolate research, we also get to known that Java Island grows a very different cacao kind, reinforcing our name.

We joke that Java always paid our bills, but in a more pleasant way now than in the past!

Why is the 70% chocolate still mild?

It starts with the cocoa chosen. Its origin and handling makes all difference in the final chocolate flavor.

Those who enjoy good coffee will agree: when the bean is not of good quality, it needs to be over roasted to standardize the flavor and mask defects. In case of chocolate, vanilla arome is used to improve a bad cacao taste.

We'd rather choose a food cacao, who deliver us the best beans.

We develop a roast profile for each lot of beans, which will emphasize that cacao taste and arome. The roast is made in low and controlled temperature. 

We don't use vanilla in any product. We intent to highlight the cacao taste, and not standardize it.

It is important to notice though: the more cocoa a chocolate has, the more intense it will taste. Cocoa flavor is naturally bitter.

Is it vegan?

Sim.

All our products are free from animal-derived ingredients.

We also keep close contact to the farmers, to ensure ethical labor, without animal or child labor.  

Is everything gluten-free and safe for celiacs? 

Yes. Our chocolates are safe for celiacs, Non-celiac gluten sensitive (NCGS) and wheat allergic.

 

We raise this flag because our founder has gluten and milk restrictions.

I'm lactose intolerant, can I buy it?

Yes.

None of our products has any animal-derived ingredient in its composition. So, all our chocolates are free from milk (lactose AND casein).

Does it have milk protein?

No.

None of our products has any animal-derived ingredient in its composition. So, all our chocolates are dairy free - casein (cow's milk protein) and lactose free.

What is used to replace dairy?

In the sweetest chocolate, like White Vegan Chocolate and 40% coconut milk chocolatewe use coconut or rice milk as cow's milk replacer. 

From 50% to 100% chocolate, there's no milk replacer since there's no need to add any. 

Are chocolate options sugar free?

Yes and No.

We use only one sweetener in our chocolate, according to our clean label philosophy.
